An Easy Way to Make Wraps & Rolls For Lunch-Boxes – Spinach & Cottage Cheese Roll

“Selling old wines in new bottles with double the kick !” was one of the mails in my mail box. This is how a reader has described my Rock N Rolls series. “Though the contents are age old (chapatti and a subji), packaging & presentation is new & innovative” she added.

Spinach and cheese roll is a health combo of vitamins, fibres and calcium packed for a perfect lunch box. Reduce the quantity of spinach and increase cheese (paneer) if the child is a fussy eater. Increase the quantity of spinach gradually, reinforcing the benefits of eating greens on health.

Basic Wraps

These form the outer covering for the rolls. Knead the dough with milk and little oil or ghee (clarified butter) if it is for the kids, the rolls will come out much softer and stay palatable till their lunch time.

Ingredients: 1 cup wholewheat flour, a pinch of salt, 1 tbsp ghee, milk or water as required.

Method : Mix the flour with salt and ghee, add milk or water to knead it to a dough of soft consistency. Cover with a moist cloth and keep aside for 20 minutes. Take dough to the size of a table tennis ball, make it a perfect sphere. Roll it in the dry flour and keep it on a flat surface. With the help of a rolling-pin, roll it out in a circular shape. Keep the tawa (griddle) on a high flame, put the rolled out chappati on it. Flip once you see the change in colour and bubbles appear. Allow to cook for another minute, with the help of a tong place the chapatti on direct flame for 2 secs. Allow it to balloon up and flip again. Smear ghee and your wrap is done. Use it with any of the variations to make a Rock N Roll!

Hint: The time of flipping the chappati decide its fate! It should be turned just once to make it soft and fluffy.
